It possesses excellent properties and is a non-nutritive, potent sweetener. Sucralose has a very high sweetness (400-800 times that of sucrose), and its sweetness is pure. The speed of sweetness development, the intensity of maximum sweetness, the duration of sweetness, and the aftertaste are all very close to sucrose. Sucralose is stable; its crystalline product remains stable for four years under dry conditions at 20°C. In aqueous solutions, within the pH range of soft drinks and at normal temperatures, sucralose is the most stable of all potent sweeteners and can be stored for over a year without any changes.
Sucralose is a derivative of the natural product sucrose. Its relative sweetness to sucrose varies with solution concentration. It has a degreasing effect on sour and salty tastes, masks astringent, bitter, and alcoholic tastes, and enhances spicy and milky flavors.
